Arugula Apple Tomato Salad
I wanted a salad with "good lettuce" meaning not ice burg lettuce like they have at fast food joints. The granny smith apples tossed in vinaigrette were a bit of an experiment (I was worried they might be too tart) but everybody seemed to like it. Next time I might try adding a little mint and a very small dash of sugar. 4 cups loosely packed Arugula 1 large granny smith apple (cut into small bits) 1 cup baby "grape" sized tomatoes cut half or thirds 5 table spoons good olive oil (Look for "First Cold Press" on the bottle) One large juicy lemon (or two smaller ones) Salt and pepper to taste Toss and Chop toss all the ingredients in a bowl take two knives.. one in each hand and run them across each other until the arugula is in smaller bite sized pieces. add a little salt and pepper to taste also consider trying a pinch of sugar or a sprig of mint. |
