Old Fashioned Healthy Cheese Grits

I like cheese grits. I really like the old fashioned "slow cook" stone ground kind with cheddar cheese. I don't like heart attacks.  Cabot 75% reduced fat sharp cheddar to the rescue :-).   Publix sells it in the "regular cheese" section.. as opposed to the fancy cheese section. It is almost as tasty as a fancy high fat cheddar and it is way better for you.

2 cups Slow Cook Grits
1/4 cup Cabot 75% reduced cheddar
salt and pepper (glenn likes red pepper)

Follow instructions on grits bag:
Usually its something like 50/50 grits and water..
simmer on low heat for about 10min stirring frequently until water is absorbed
Add cheese & stir
Season with salt and pepper to taste
